Ingredients

Salad Ingredients

  • 4 cups Arugula, washed and dried Use fresh, organic arugula for the best flavor.
  • 100 g Blue cheese, crumbled Can be substituted with goat cheese or feta.
  • 1 cup Cherry tomatoes, halved
  • 0.5 small onion Red onion, thinly sliced
  • 0.5 cup Walnuts, toasted (if desired) Toast walnuts in a dry pan for added flavor.

Dressing

  • 2-3 tablespoons Olive oil Drizzle over salad.
  • 1-2 tablespoons Balsamic vinegar For added flavor.
  • Salt and pepper, to taste

Instructions

Preparation

  • Wash and dry the arugula thoroughly.
  • Crumble the blue cheese and halve the cherry tomatoes.
  • Thinly slice the red onion.

Mixing

  • In a large mixing bowl, gently combine the arugula, blue cheese, cherry tomatoes, and red onion.
  • If desired, toast the walnuts in a dry pan over medium heat until slightly golden. Add them to the salad mixture.
  • Drizzle olive oil and balsamic vinegar over the salad, and sprinkle salt and pepper to taste.
  • Toss everything together gently so that the ingredients are mixed well, avoiding breaking the cheese into too small pieces.

Serving

  • Serve the salad immediately on individual plates or in a large bowl.

Notes

It's best to eat this salad fresh. Store leftovers in an airtight container in the fridge, keeping the dressing separate to prevent wilting. For added crunch, consider including sliced apples or pears.
