Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season the chicken thighs with salt, pepper, and fresh thyme. Sear them in a skillet over medium heat until browned on both sides, roughly 4-5 minutes per side.
  • Slice the apples into thin wedges and set them aside.
  • Mix the chicken broth with ground cinnamon, remaining thyme, and additional seasonings in a bowl.
  • Grease a baking dish with a little butter or oil. Layer the seared chicken in the dish and generously top with the apple slices.
  • Pour the broth mixture evenly over the chicken and apples.
  • Combine the breadcrumbs with melted butter in a small bowl, then sprinkle this mix over the casserole.
  • Bake uncovered for 40-50 minutes, or until the topping is golden brown and the chicken is cooked through.
  • Let rest for 5-10 minutes before serving.

Notes

Drizzle with a little honey for a touch of sweetness before serving. This casserole can be prepared in advance and stored in the fridge before baking.
