For the Filling
- 8 ounces Brie Cheese can substitute with plant-based cheese for vegan
- 1 cup Fresh Cranberries or dried, rehydrated for best texture
- ½ cup Pecans or substitute walnuts for nut-free
- ¼ cup Maple Syrup or substitute with honey or agave
- 2 tablespoons Olive Oil or use melted butter

Preparation
Preheat the oven to 400°F (200°C).
Prepare the sweet potatoes by cleaning and piercing them with a fork. Place them on a baking sheet and roast for about 45-60 minutes until they are soft.
Mix the filling by combining fresh cranberries, chopped pecans, maple syrup, olive oil, salt, and pepper in a bowl.
Cool the sweet potatoes slightly after roasting, then cut them in half lengthwise and scoop out some of the flesh.
Mash the extracted sweet potato flesh with the berry mixture until well incorporated.
Stuff the sweet potato halves with the filling and top with diced brie cheese. Bake for an additional 10-15 minutes until the cheese melts.
Garnish with fresh thyme before serving.
For a golden-brown crust, broil for an additional 2-3 minutes.
Assemble the stuffed sweet potatoes up to three days in advance and store in the fridge. Reheat before serving.
