Ingredients

For the Sweet Potatoes

  • 4 pieces Sweet Potatoes

For the Filling

  • 8 ounces Brie Cheese can substitute with plant-based cheese for vegan
  • 1 cup Fresh Cranberries or dried, rehydrated for best texture
  • ½ cup Pecans or substitute walnuts for nut-free
  • ¼ cup Maple Syrup or substitute with honey or agave
  • 2 tablespoons Olive Oil or use melted butter
  • to taste Salt
  • to taste Pepper

For Garnish

  • 2 teaspoons Fresh Thyme can substitute with rosemary

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Prepare the sweet potatoes by cleaning and piercing them with a fork. Place them on a baking sheet and roast for about 45-60 minutes until they are soft.
  • Mix the filling by combining fresh cranberries, chopped pecans, maple syrup, olive oil, salt, and pepper in a bowl.
  • Cool the sweet potatoes slightly after roasting, then cut them in half lengthwise and scoop out some of the flesh.
  • Mash the extracted sweet potato flesh with the berry mixture until well incorporated.
  • Stuff the sweet potato halves with the filling and top with diced brie cheese. Bake for an additional 10-15 minutes until the cheese melts.
  • Garnish with fresh thyme before serving.
  • For a golden-brown crust, broil for an additional 2-3 minutes.

Notes

Assemble the stuffed sweet potatoes up to three days in advance and store in the fridge. Reheat before serving.
