For the Vegetables

Instructions

Preparation Steps

  • Spray the crockpot insert with nonstick spray to prevent sticking.
  • Place the chicken breasts at the bottom and season with salt, pepper, and thyme.
  • Layer the rice over the chicken, then the onion, garlic, and peas and carrots.
  • Pour the broth and soup over the ingredients, stirring gently to combine.
  • Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 2.5 hours.
  • Shred the chicken with two forks and mix back into the crockpot with cheddar cheese.
