Equipment

  • Slow cooker

Ingredients

For the Beef

  • 3 pounds Beef Chuck Roast or stew meat for a budget-friendly option

For the Gravy

  • 1 packet Onion Soup Mix reduced-sodium versions for a healthier option
  • 1 packet Brown Gravy Mix can substitute with a blend of beef broth and cornstarch
  • ¼ cup Apple Cider Vinegar white or red wine vinegar can be used
  • 2 cups Water

For Serving

  • 4 cloves Garlic optional, serves well with garlic bread

Instructions

Cooking Instructions

  • Start by cutting your beef chuck roast into larger chunks, taking care not to overcook.
  • If you crave that depth of flavor, brown the beef chunks in a skillet over medium-high heat for about 3-4 minutes per side.
  • Place the prepared beef into the slow cooker. Sprinkle over the onion soup mix and brown gravy mix, followed by the apple cider vinegar. Pour in enough water to mix everything well.
  • Cover and set your slow cooker to LOW for 6-8 hours or HIGH for 3-4 hours.
  • If you prefer a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, stirring this mixture into the slow cooker for the last 30 minutes.
  • Carefully shred the beef, if desired, and serve it over a generous scoop of creamy mashed potatoes.

Notes

Garnish with freshly chopped parsley for a touch of color and freshness. Refrigerate leftovers in an airtight container for up to 4 days.
