Instructions

How to Make Easy Christmas Pecan Turtles

  • Preheat your oven to 350°F (175°C) to prepare for toasting the pecans.
  • Spread 2 cups of pecans evenly on a baking pan. Toast for about 8-10 minutes until they're fragrant and slightly golden. Let them cool and then chop.
  • In a microwave-safe bowl, melt 6 tablespoons of butter. Combine it with ½ cup each of light brown sugar, granulated sugar, light corn syrup, and sweetened condensed milk; stir well. Microwave for 6 minutes, stirring halfway through.
  • Stir in 1½ teaspoons of vanilla extract into your caramel mixture. Gently fold in the chopped pecans.
  • Transfer the mixture to a pan and refrigerate for at least 30 minutes.
  • Melt 2 cups of chopped chocolate until smooth.
  • Drop spoonfuls of the cooled pecan-caramel mixture into the melted chocolate, then place them onto wax paper for setting.
  • Refrigerate the turtles for about 30 minutes to let the chocolate firm up completely.
