  • 14.5 oz Diced Tomatoes Using fresh tomatoes is a fresh option.
  • 2 tablespoons Olive Oil Can be replaced with neutral oils like canola or avocado oil.
  • to taste Salt Essential for enhancing flavors.
  • to taste Pepper Essential for enhancing flavors.

For Serving

  • 8 pieces Tortillas Flour or Corn; use gluten-free tortillas if necessary.
  • Optional Toppings Sour cream, guacamole, shredded cheese, cilantro, and lime wedges.

Instructions

Basic Instructions

  • Begin by slicing the bell pepper and onion into strips, and mincing the garlic.
  • In a bowl, combine your chosen chicken or beef with fajita seasoning, salt, and pepper. Toss until well-coated.
  • Place the seasoned protein at the bottom of the crockpot. Follow with the bell peppers, onions, and garlic on top.
  • Pour the canned diced tomatoes over the top of the ingredients.
  • Drizzle olive oil over the mixture.
  • Cover the crockpot and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  • Once the cooking time is up, shred the meat with two forks right in the pot.
  • Serve warm with your choice of tortillas and an array of toppings.

Notes
