Ingredients

For the Beef

  • 1 pound Beef (sirloin steak or boneless chuck roast) Sirloin for tenderness or chuck roast for budget-friendly option

For the Sauce

  • 2 cups Beef Stock Consider vegetable broth for a lighter version
  • ½ cup Soy Sauce Opt for low-sodium if watching salt intake
  • ¼ cup Brown Sugar Can be substituted for honey or maple syrup

For Flavor

  • 2 tablespoons Sesame Oil Using olive oil will change the flavor profile
  • 4 cloves Minced Garlic Fresh garlic is best; can use garlic powder (½ teaspoon per clove)

For the Veggies

  • 1 pound Frozen Broccoli Florets Fresh broccoli can be used but best added later

For Thicker Sauce

  • 2 tablespoons Cornstarch Mix with water for the slurry
  • ¼ cup Water Used for slurry

Instructions

  • In your slow cooker, combine beef stock, soy sauce, brown sugar, sesame oil, and minced garlic. Whisk until blended.
  • Place thinly sliced beef into the sauce mixture and toss to coat every piece.
  • Cover the slow cooker and set it on low heat. Let it cook for 5 hours.
  • In a small bowl, mix cornstarch with cold water to form a slurry. Pour this into the slow cooker, stirring gently to thicken the sauce.
  • Scatter the frozen broccoli florets over the beef. Stir gently and cover to cook for an additional 30 minutes on low.
  • Dish out the beef and broccoli over cooked rice. Optionally, sprinkle with sesame seeds or green onions.

Notes

Slice against the grain for tenderness. Add broccoli in last 30 minutes to keep it crisp.
