- 1 cup Sharp Cheddar Cheese Grated
- ½ cup Parmesan Cheese Freshly grated
- 1 tablespoon Fresh Thyme Can substitute with rosemary
- ½ cup Breadcrumbs Panko preferred for topping
How to Make Scalloped Sweet Potatoes
Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish with butter.
Melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Stir in flour to create a roux, cooking for another minute while whisking continuously.
Whisk in the milk and heavy cream gradually until smooth. Season with salt, pepper, and nutmeg.
Cook the mixture until it thickens enough to coat the back of a spoon, about 4-5 minutes.
Remove from heat and mix in the grated cheddar and Parmesan cheese until melted and smooth.
Layer half of the sweet potato slices in the greased baking dish. Pour half of the cheese sauce over them and sprinkle half of the thyme.
Repeat the layering process with the remaining sweet potatoes, cheese sauce, and thyme.
Top with breadcrumbs, cover with foil, and bake for 30 minutes.
Uncover and bake for an additional 15-20 minutes until golden brown and tender.
Cool slightly before serving to achieve the best texture.
