Instructions

How to Make Instant Pot Creamy Chicken and Rice

  • Set your Instant Pot to sauté mode. Heat olive oil, then add the finely chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and translucent.
  • Add the boneless, skinless chicken pieces to the pot. Season with salt and pepper, and cook for another 2-3 minutes until lightly browned.
  • Incorporate the rinsed long grain white rice, low-sodium chicken broth, and frozen mixed vegetables. Stir to ensure the rice is mixed well.
  • Secure the lid on your Instant Pot and set the valve to sealing. Cook on high pressure for 8 minutes. Allow a natural pressure release for 5 minutes, then quick release any remaining pressure.
  • Carefully open the lid and mix in the heavy cream and shredded cheddar cheese. Stir until creamy and cheese is melted.
  • Serve hot, optionally garnished with fresh herbs for added flavor.

Notes

Consider adding a sprinkle of paprika for a pop of color and flavor. Seal the lid tightly to maintain pressure during cooking and scrape any stuck bits off the pot’s bottom before sealing to prevent burn notices.
