  • ¼ cup Fresh Parsley Basil or chives can be substitutes.

Instructions

How to Make Cheesy Ground Beef & Potato Casserole

  • Warm 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  • Add 1 pound of ground beef to the skillet, cooking until browned for about 5-7 minutes.
  • Toss in 1 chopped onion and 2 minced garlic cloves; sauté for 3-4 minutes until fragrant.
  • Stir in 3 diced potatoes, 1 teaspoon of salt, ½ teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of dried oregano.
  • Pour in 1 cup of beef broth, cover the skillet, and reduce heat to low. Let simmer for 20-25 minutes until fork-tender.
  • Sprinkle 1.5 cups of shredded cheddar cheese over the casserole, cover again, and cook for 2-3 minutes until melted.
  • Finish with a sprinkle of fresh parsley before serving.
