Ingredients

For the Gnocchi

  • 16 oz gnocchi store-bought or homemade

For the Cooking

  • 2 tablespoons olive oil extra virgin preferred
  • 2 cloves garlic minced

For the Greens

  • 4 cups fresh spinach or kale as a substitute

For the Creaminess

  • 1 cup feta cheese crumbled; goat cheese works too

For Seasoning

  • to taste salt
  • to taste black pepper freshly cracked
  • optional red pepper flakes for added heat

Instructions

Preparation

  • Bring a large pot of salted water to a rolling boil. Carefully add the gnocchi and cook until they float to the surface, usually about 2-3 minutes. Remove them with a slotted spoon and set aside.
  • In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat. Let it warm up until it shimmers.
  • Add the boiled gnocchi to the hot oil, cooking undisturbed for about 2-3 minutes until golden brown, then stir gently to crisp all sides.
  • Lower the heat and add 2 cloves of minced garlic. Sauté for about 1 minute until fragrant.
  • Toss in 4 cups of fresh spinach, stirring until wilted, about 2-3 minutes.
  • Season with salt, pepper, and optional red pepper flakes. Fold in 1 cup of crumbled feta cheese until it melts slightly. Serve immediately.

Notes

Optional: Drizzle with extra virgin olive oil before serving for added richness. For leftovers, reheat in a pan for best results.
