Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and prepare an 8x8 baking dish by lining it with parchment paper.
  • Blend gluten-free flour, cold butter, and sugar in a food processor until a dough forms.
  • Firmly press the mixture into the bottom of your prepared pan to create a crust.
  • Mix together canned sweet potato, maple syrup, pumpkin seasoning, vanilla extract, egg, arrowroot powder, and evaporated milk until smooth.
  • Pour the sweet potato filling over the crust in the baking dish.
  • Bake for 15 minutes at 425°F, then reduce the temperature to 350°F (175°C) and bake for an additional 20 minutes.
  • Cool the bars in the pan on a wire rack until completely cooled.
