How to Make Chocolate Covered Cranberry Sauce Bites
Open your can of jellied cranberry sauce and cut it into approximately ½-inch thick discs. You'll get about two full 'ribs' from the can, setting a lovely base for your bites.
Arrange the cranberry slices on a parchment-lined baking sheet, making sure they don’t overlap. Freeze them for at least 30 minutes until they are firm and ready for dipping.
In a microwave-safe bowl, combine dark chocolate chips and coconut oil (if using). Heat in the microwave for 1 minute, stirring gently, then continue heating in 15-second bursts until the mixture is fully melted and silky smooth.
Remove the frozen cranberry slices from the freezer. Use a fork to dip each slice into the melted chocolate, allowing any excess chocolate to drip off. Place the coated slices back on the baking sheet.
Transfer the baking sheet back to the freezer for about 30 minutes, or until the chocolate is completely set and has a nice firm coating.
