For the Stir-Fry

  • 1 pound Flank Steak or Skirt Steak, sliced against the grain
  • 1 tablespoon Soy Sauce or Tamari for gluten-free
  • 1 tablespoon Peanut Oil or Vegetable Oil
  • 1 tablespoon Cornstarch for thickening
  • 0.5 teaspoon Baking Soda optional, for tenderizing
  • 0.5 cup Chicken Stock or Beef Stock
  • 2 tablespoons Shaoxing Wine or Dry Sherry
  • 1 tablespoon Dark Soy Sauce
  • 1 tablespoon Brown Sugar or white sugar if needed
  • 4 cups Broccoli fresh, chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger fresh, minced

Instructions

Cooking Steps

  • Slice the flank or skirt steak thinly against the grain. In a bowl, combine with soy sauce, peanut oil, and cornstarch, then marinate for about 10 minutes.
  • In a separate bowl, mix together chicken stock, Shaoxing wine, soy sauce, dark soy sauce, brown sugar, and cornstarch.
  • Bring water to a boil in a skillet. Add broccoli, cover, and steam for approximately 1 minute until tender and bright green.
  • In the same skillet, heat oil over medium-high heat. Add the marinated beef in a single layer and sear for 30 seconds before flipping. Cook until just pink inside.
  • Toss in the minced garlic and freshly grated ginger. Stir for about 30 seconds until fragrant.
  • Return the steamed broccoli to the skillet, then pour in the sauce mixture. Cook until the sauce thickens.

Notes

Garnish with toasted sesame seeds for added crunch.
