  • 1 can (15 oz) black beans Drain and rinse to reduce sodium.
  • 1 block (8 oz) plain cream cheese Consider using reduced-fat for a lighter option.
  • 2 limes fresh squeezed lime juice Fresh juice recommended for best flavor.

Instructions

How to Make Fiesta Chicken

  • Place thawed boneless, skinless chicken breasts in the Crock Pot.
  • Add the drained black beans, drained corn, Rotel tomatoes, onion powder, ranch seasoning, and black pepper. Mix them gently with the chicken.
  • Squeeze fresh lime juice over the top, then pour chicken broth across the ingredients. Crown your mix with the block of cream cheese.
  • Cover the Crock Pot and cook on HIGH for 3-4 hours or on LOW for 5-6 hours, until the chicken reaches an internal temperature of 165°F.
  • Once cooked, shred the chicken using two forks and return it to the Crock Pot, stirring until the melted cream cheese coats the mixture.
