Ingredients

For the Beef

  • 2 pounds Beef Stew Meat Can substitute with chuck roast or brisket.

For the Potatoes

  • 1.5 pounds Baby Potatoes Substitute with regular or sweet potatoes.

For the Sauce

  • 4 tablespoons Unsalted Butter Use ghee or olive oil for a healthier option.
  • 4 cloves Garlic Fresh garlic is best.
  • 1 cup Beef Broth Substitute with vegetable broth for vegetarian option.
  • 2 tablespoons Worcestershire Sauce Can replace with soy sauce.

For the Herbs

  • 1 teaspoon Dried Thyme Other herbs can be used to taste.
  • 1 teaspoon Dried Rosemary Fresh herbs can be used for intensity.

Instructions

Cooking Steps

  • Sear Beef: Heat olive oil in a large skillet over medium-high heat. Season the beef cubes with salt and pepper, then sear for 2-3 minutes on each side until browned. Transfer to the slow cooker.
  • Sauté Garlic: In the same skillet, melt 2 tablespoons of unsalted butter. Add minced garlic and sauté for about 1 minute until it's fragrant and golden.
  • Combine Sauces: Stir in the beef broth and Worcestershire sauce into the skillet. Scrape the browned bits off the bottom for extra flavor. Add thyme and rosemary, then pour this mixture over the beef in the slow cooker.
  • Add Potatoes: Toss halved baby potatoes into the slow cooker, mixing them well with the garlic butter sauce to ensure they're coated.
  • Finish: Top the beef and potatoes with the remaining butter. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the beef is tender.
  • Season & Garnish: Before serving, taste and adjust the seasoning as needed. Serve warm, garnished with freshly chopped parsley.

Notes
