Ingredients

For the Ribs

  • 3 pounds Beef Short Ribs Well-marbled for tenderness
  • 2 tablespoons Olive Oil Can substitute with avocado or canola oil

For the Sauce

  • 1 cup Red Wine Can substitute with beef broth or grape juice
  • 2 tablespoons Tomato Paste Or crushed tomatoes
  • 2 tablespoons Brown Sugar Can use honey or maple syrup
  • ½ cup Soy Sauce Use gluten-free if needed

For Aromatics

  • 1 large Onion Sliced
  • 4 cloves Garlic Minced

For Seasoning

  • 1 tablespoon Smoked Paprika Or regular paprika
  • 1 teaspoon Dried Thyme Fresh thyme can be used if available
  • 1 teaspoon Dried Rosemary Crush leaves slightly for better flavor

Instructions

Preparation

  • Season the beef short ribs generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat and sear the ribs on all sides until browned.
  • Transfer the seared ribs into the crockpot.
  • In the same skillet, sauté sliced onion for 3-4 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
  • Stir in red wine, soy sauce, tomato paste, brown sugar, smoked paprika, thyme, and rosemary. Simmer for a few minutes.
  • Pour the sauce over the ribs in the crockpot and add bay leaves.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours.
  • If desired, skim off excess fat and reduce the cooking liquid in a saucepan until thickened.
  • Serve hot, garnished with fresh parsley if desired.
