For the Ribs
- 3 pounds Beef Short Ribs Well-marbled for tenderness

Preparation
Season the beef short ribs generously with salt and pepper.
Heat olive oil in a skillet over medium-high heat and sear the ribs on all sides until browned.
Transfer the seared ribs into the crockpot.
In the same skillet, sauté sliced onion for 3-4 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
Stir in red wine, soy sauce, tomato paste, brown sugar, smoked paprika, thyme, and rosemary. Simmer for a few minutes.
Pour the sauce over the ribs in the crockpot and add bay leaves.
Cover and cook on low for 8-10 hours or high for 4-6 hours.
If desired, skim off excess fat and reduce the cooking liquid in a saucepan until thickened.
