Ingredients

For the Beef

  • 3 pounds Chuck Roast Brisket can be used for a richer taste.
  • 4 cups Beef Broth Chicken broth can be substituted.

For the Sauce

  • 3 pieces Dried Guajillo Peppers Soak first for best results.
  • 3 pieces Dried Ancho Peppers Adjust for desired spice level.
  • 2 pieces Chipotle Peppers in Adobo Sauce Use less for a milder version.
  • 2 cups Tomatoes Canned tomatoes work well.

For the Vegetables

  • 1 whole Onion Consider adding shallots.
  • 4 cloves Garlic Increase for extra flavor.
  • 2 pieces Carrots Other veggies like bell peppers can be included.

For Seasoning

  • 2 teaspoons Cumin Pairs well with oregano.
  • 1 teaspoon Oregano Mexican oregano is recommended.
  • 2 pieces Bay Leaves Remember to remove after cooking.

For Serving

  • 12 pieces Corn Tortillas Flour tortillas can be used.
  • 1 bunch Fresh Cilantro Can substitute with parsley.
  • 2 whole Lime Wedges Lime juice also works well.

Instructions

  • Start by soaking the dried guajillo and ancho peppers in hot water for about 15 minutes, until softened.
  • In a blender, combine the soaked peppers, chipotle peppers in adobo, tomatoes, garlic, cumin, oregano, and bay leaves. Blend until smooth.
  • Chop your onions, carrots, and any additional vegetables you want to include.
  • Place the chopped onions at the bottom of the crockpot, followed by the beef chuck roast. Pour the blended sauce over the beef and add the beef broth.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
  • Once cooked, carefully shred the beef using two forks and return it to the sauce in the crockpot.
  • Use the beef birria as a filling for warm corn tortillas, adding fresh cilantro and a squeeze of lime.

Notes

Optional: Add diced avocado or pickled onions for an extra flavor twist.
