For the Beef

Instructions
Start by soaking the dried guajillo and ancho peppers in hot water for about 15 minutes, until softened.
In a blender, combine the soaked peppers, chipotle peppers in adobo, tomatoes, garlic, cumin, oregano, and bay leaves. Blend until smooth.
Chop your onions, carrots, and any additional vegetables you want to include.
Place the chopped onions at the bottom of the crockpot, followed by the beef chuck roast. Pour the blended sauce over the beef and add the beef broth.
Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
Once cooked, carefully shred the beef using two forks and return it to the sauce in the crockpot.
Use the beef birria as a filling for warm corn tortillas, adding fresh cilantro and a squeeze of lime.
Optional: Add diced avocado or pickled onions for an extra flavor twist.
