Ingredients

For the Chicken

  • 4 pieces Boneless, Skinless Chicken Breasts
  • ½ cup Pure Maple Syrup
  • 2 tablespoons Apple Cider Vinegar
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Fresh Thyme Leaves

For the Sweet Potatoes

  • 2 cups Sweet Potatoes Cubed
  • 2 tablespoons Butter Optional for toasting pecans
  • ½ cup Chopped Pecans Optional
  • 2 tablespoons Fresh Parsley For garnish

Instructions

Directions

  • Preheat your oven to 400°F (200°C).
  • Toss sweet potato cubes with olive oil, garlic powder, salt, and pepper. Spread on one-half of a prepared baking sheet lined with parchment paper.
  • Coat the chicken breasts with the remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper for a glaze.
  • Place the maple-glazed chicken on the other half of the baking sheet, avoiding overlap.
  • Roast in the preheated oven for 25-30 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.
  • Melt butter in a skillet over medium heat, add chopped pecans, and toast for 3-4 minutes until fragrant and golden brown.
  • Sprinkle toasted pecans over sweet potatoes and serve chicken garnished with fresh parsley.

Notes

Drizzle with additional maple syrup for extra sweetness if desired. Allow leftovers to cool before storing.
