For the Chicken
- 4 pieces Boneless, Skinless Chicken Breasts
- ½ cup Pure Maple Syrup
- 2 tablespoons Apple Cider Vinegar
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoons Fresh Thyme Leaves
For the Sweet Potatoes
- 2 cups Sweet Potatoes Cubed

Directions
Preheat your oven to 400°F (200°C).
Toss sweet potato cubes with olive oil, garlic powder, salt, and pepper. Spread on one-half of a prepared baking sheet lined with parchment paper.
Coat the chicken breasts with the remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper for a glaze.
Place the maple-glazed chicken on the other half of the baking sheet, avoiding overlap.
Roast in the preheated oven for 25-30 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.
Melt butter in a skillet over medium heat, add chopped pecans, and toast for 3-4 minutes until fragrant and golden brown.
Sprinkle toasted pecans over sweet potatoes and serve chicken garnished with fresh parsley.
