Equipment

  • Slow cooker

Ingredients

For the Beef

  • 1 lb Beef (Sirloin or Chuck Roast) Chuck is budget-friendly and gets tender with slow cooking.

For the Sauce

  • 1 cup Beef Stock Homemade or store-bought options work.
  • ½ cup Soy Sauce Tamari can be used as a gluten-free substitute.
  • ¼ cup Brown Sugar Honey or coconut sugar can serve as alternatives.
  • 2 tablespoon Sesame Oil Olive oil can be substituted if unavailable.
  • 4 cloves Minced Garlic Using fresh garlic will yield the best flavor.

For Thickening

  • 2 tablespoon Cornstarch You can use flour if cornstarch is not on hand.

For the Vegetables

  • 1 lb Frozen Broccoli Florets Fresh broccoli can be substituted; adjust cooking time.

Instructions

Directions

  • In your slow cooker, combine beef stock, soy sauce, brown sugar, sesame oil, and minced garlic. Stir well until everything is blended.
  • Thinly slice the beef against the grain, then add it to the sauce, ensuring every piece is well coated.
  • Cover the slow cooker and set it on low. Allow it to cook for about 5 hours.
  • In a separate bowl, mix cornstarch with cold water to form a slurry. Add it to the slow cooker while stirring.
  • Add the frozen broccoli florets to the pot and gently stir them in, cooking for an additional 30 minutes on low.
  • Serve the beef and broccoli over your choice of white rice, quinoa, or lo mein.

Notes

Slice the beef thinly against the grain for maximum tenderness. Store leftovers in an airtight container in the fridge for up to 4 days.
