For the Soup
- 4 large large onions Use sweet onions like Vidalia or yellow onions for the best flavor.
- 50 g butter For cooking the onions.
- 1 liter beef broth Homemade broth gives a richer flavor.
- 200 ml white wine Can be skipped or substituted with a non-alcoholic option.
- 1 teaspoon thyme
For the Topping
- 1 baguette baguette For making croutons.
- 200 g Gruyère cheese, grated Can be substituted with Swiss cheese or mozzarella.
Cooking the Soup
In a large pot, heat the butter over medium heat.
Add the sliced onions and cook them for about 20-25 minutes until they turn golden brown, stirring occasionally to prevent burning.
Once the onions are golden, pour in the beef broth, followed by the white wine and thyme.
Season with salt and pepper to taste and let it simmer for 30 minutes.
Taste the soup and adjust seasoning if necessary.
Baking the Soup
Pour the soup into oven-safe bowls, top with croutons and sprinkle grated Gruyère cheese over the top.
Preheat the oven to 200°C (about 400°F) and place the bowls in the oven.
Bake for 5-10 minutes, or until the cheese is bubbly and golden.
Let the soup cool for a minute before serving. It pairs well with a fresh salad or extra crusty bread. Leftover soup can be stored in an airtight container for up to three days or frozen without cheese and croutons.
