Directions
Preheat your oven to 375°F (190°C). Cook the jumbo pasta shells in boiling salted water until al dente, about 8-10 minutes, then drain and lay them flat to cool.
In a large mixing bowl, blend the ricotta cheese, half of the mozzarella, nutmeg, garlic powder, and salt until creamy and well combined.
Using a spoon, generously fill each cooked shell with the ricotta mixture, then place them upright in a greased baking dish.
In a separate bowl, whisk together the pumpkin puree, heavy cream, and spices. Pour this sauce evenly over the stuffed shells.
Sprinkle the remaining mozzarella on top, cover the dish with foil, and bake for 25 minutes. Uncover and bake for an additional 5 minutes until the cheese is bubbly and golden brown.
