Ingredients

  • Gather Ingredients: Start by preparing your ingredients. Cut your beef stew meat into bite-sized pieces and halve the baby potatoes for even cooking.
  • (Optional) Parboil Potatoes: If you prefer extra tender potatoes, parboil the baby potatoes in boiling water for 3-5 minutes.
  • Sear the Beef: Heat olive oil in a skillet over medium-high heat. Add the beef bites and sear until browned on all sides, about 5-7 minutes.
  • Mix the Sauce: In a bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
  • Combine in Slow Cooker: In your slow cooker, layer the halved potatoes and seared beef. Pour the garlic butter sauce over the top, then add the beef broth.
  • Cook Until Tender: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  • Rest Before Serving: Allow the dish to rest for 10 minutes after cooking.
