Ingredients

For the Beef

  • 2 to 3 lbs beef chuck roast, cut into large chunks Cut into 2 to 3-inch chunks for even cooking.
  • 1 packet onion soup mix
  • 1 packet brown gravy mix
  • ¼ cup apple cider vinegar Helps to tenderize the meat.

For Serving

  • 4 cups prepared mashed potatoes Prepare according to package instructions.
  • 6 to 8 slices prepared garlic bread Warm up before serving.

Preparation

  • Cut the beef chuck roast into large 2 to 3-inch chunks.
  • Place the beef chunks in the slow cooker.
  • Sprinkle the onion soup mix and brown gravy mix evenly over the beef.
  • Pour the apple cider vinegar over the seasoned beef.
  • Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours until the beef is fork-tender.
  • About 30 minutes before serving, prepare the mashed potatoes and warm the garlic bread.

Serving

  • Serve the beef and gravy over the mashed potatoes.
  • Place the garlic bread on the side for dipping or eating alongside.

Notes

For extra flavor, brown the beef chunks before adding them to the slow cooker. You can also mix in vegetables like carrots or peas. To enrich the gravy, add a splash of beef broth or red wine. If a thicker gravy is desired, use a cornstarch slurry in the last 30 minutes of cooking.
